The right way to be a vegetarian

In fact, doing just that can be a recipe for vitamin deficiencies and poor health, according to local registered nutritional consultant and author Kathy Smart. Having witnessed clients blindly give up meat and later arrive in her office looking gaunt, tired and in serious need of vitamin B12, the personal fitness trainer decided to host an introductory lesson to vegetarianism.

Reducing or eliminating meat or animal products from one’s diet is catching on, according to Smart, explaining people decide to make the switch for either health or environmental reasons.

In the case of health, studies show vegetarianism is associated with decreased risks of obesity, constipation plus new research suggests it also decreases heart disease and cholesterol levels.

Environmentally-speaking, it takes more land and resources to support a cow than it does to grow a crop of whole grains, Smart indicated.

With such incentives, it’s little wonder people are turning away from meat. While a lot try vegetarianism to one degree or another, not all are doing it in a healthy manner.

“They just pick foods without meat,” Smart said. “You need to eat a wide variety of foods and combine them properly.”

Her upcoming workshop will focus on 10 vegetarian super foods, explain the basic principles of food combinations and include recipes and even a delicious vegetarian treat.

One of those super foods is quinoa, Smart said, which is gluten free, has protein and is high in B-complex. Smart will also discuss lentils and whole grains and give examples of how to create a complete protein without meat.

It might sound complex, but Smart said it’s actually very simple once people know what they’re looking for and understand how to use a variety of whole grains. and the workshop isn’t just for those wishing to banish meat from their diet. It’s also useful for those looking to add healthy vegetarian options to their meal planning.

“It’s a solid introduction and it’s also fun,” Smart said, noting she’ll focus on foods people can eat instead of those vegetarians should steer clear.

The workshop does require a $20 fee because everyone will be given a folder of recipes from Smart’s cookbooks as well as handouts about sources for vitamins. The event will also include a peanut butter and dark chocolate chip snack.
